This Stuffed Peppers recipe is easy and I usually have most ingredients on hand other than the fresh bell peppers! 90% can be made ahead of time and then just heated in the oven when you come home from work or even put into the crockpot on low!

Cook ground beef in fryng pan with diced onion, drain fat
Add tomatoes
Cut tops off green peppers
Dice the pepper tops and put them in to the frying pan with beef. Stir in rice and rest of dry ingredients, seasonings and cook until peppers soften
Boil peppers in pot of water on stove, turning often. Cook until softened. Approx 10-15 minutes
Spread couple spoonfuls of red sauce on bottom of corningware dish, add peppers. Fill with beef mixture
Spoon red suace on top of each of the peppers, then sprinkle shredded cheese and parmesan cheese on the top.
Bake at 350 until cheese is melted and ground beef is heated through. If you are making all at the same time should only take 15-20 minutes. If made the night before and refirgerated, cook for approximately an hour to make sure heated through.

I actually double this recipe and make with 4-5lb packages of ground beef when on sale in a Ground Beef Meal Deal at Tops Markets. Depending on the size of the beef package, you can get up to 14 peppers and then freeze half for another dinner!!
To serve this dinner to a family that does not all like peppers, the filling makes for great tacos/burritos!! I always try to keep some on the side for my more picky eaters!!!
